Baked Trout with Kale Pesto & Peach Salsa

Kale Pesto, is a staple in my kitchen even before the super food fad started.

It's so simple and easy to make, that can be used in many ways: Dip, Pasta Sauce, Condiments, etc.

Ontario Peach Peach & Kale Salsa

Baked Trout

Peach Salsa

  • 1 Peach
  • 1 bunch of kale, separate the leaves from the stem
  • 1 Tomato
  • 1/2 lemon
  • Light Olive Oil
  • Salt & Pepper

Don't throw the stems of your kale, soften them up in boiling water.

Kale Pesto

  • 2 cloves of garlic, add more if love garlic, like I do
  • Extra Virgin Olive Oil
  • Pine nuts (optional)
  • Salt

Rainbow Trout, fillet, add salt and pepper

Preheat the oven at 400º, brush the pan with olive oil and bake the trout for 15mins

*I usually turn the oven down to 300º, leave the trout for another 5mins to get that crisp skin without drying the fish

Of course, 90% of my meal is served with steamed rice
