I created this dish during the pandemic, back then grocery shopping is limited due to lock down so I try to be creative with what I have. At first I was craving for tom yum soup but because I didn't have all the ingredients I came up with - Spicy Tofu Stew served with rice.
Sauté the garlic in low heat add red peppers and scotch bonnet. Once the peppers are starting to soften add the potatoes, and slowly pour the stock. Then add fish sauce to taste. Bring to boil. Add tofu, and let it simmer. Do not forget to taste your food while cooking and to mix the pot. The key to a tasteful dish is to use your senses. Only you can tell when it's ready to serve.
